The
recipes for our cookies have been perfected to enhance texture,
consistency, and sweetness. Our Chocolate Orange Biscotti includes
orange zest and cacao nibs, small pieces of roasted cacao beans, to
give them a range of fruity, earthy and spicy flavors, and a nutty
crunch. Then they are dipped in bittersweet chocolate for an even more
intense chocolate flavor. Our shortbread cookies are flaky and tender.
We offer them in a variety of shapes, from "Big Al" to hearts and
flowers. And our bakers form them by hand, like all our cookies.

Croissants & Pastries
Our
delicate, buttery croissants are made from carefully selected premium
ingredients, eggs from free range chickens, and grain and flour raised
without man-made pesticides or fertilizers. The all-butter dough is
formed in the traditional Swiss crescent shape and cooked to
perfection. Rich creamy chocolate is baked into the pain-au-chocolat.
Fruit is folded into our muffins and scones by hand, just before
baking, to create exquisite flavor and texture in deliciously moist
muffins and flaky scones.

Sweet Pastries
Only the best individually made cakes reach our bakery case. 70% bittersweet chocolate from Scharffen Berger, Vevet 47% dark couverture chocolate from Esprit des Alpes and rich cream are blended in our chocolate truffle and chocolate mousse cakes. Fresh seasonal fruits are arranged by hand over home made pastry cream and a short bread crust to make our fruit tarts. Three layers of frangipane cake are combined with Italian buttercream and fondant to create traditional French petit fours.

Chock full of whole cherries, hand made candied lemon and orange peel, dried tropical fruits, and fresh pecans, we make our fruit cakes in October to they can soak in rum for a full month before they arrive in our bakery case. Our gingerbread cookies are hand decorated and gingerbread houses are available by special order. Traditional French yule logs, or Bûche de Noël, are filled with chocolate mousse, topped with chocolate buttercream, and decorated with delicate meringue "mushrooms".
