Free Wedding Cake Cutting Demonstration and Tasting
The first Thursday of each month is ART NIGHT in Tuscaloosa and Northport. Starting in March, join us at 6:30 pm for a free demonstation of how to cut a wedding cake. This is a must for brides-to-be, mothers of the bride, hostesses, caterers, and anyone else who might ever be called upon to cut a tiered cake. We will demonstrate the safest and most efficient way of cutting and serving a tiered wedding cake. We will cut and serve a real cake, which will be available for sampling all evening.
Cake Carving Demonstration
Learn how to carve cake into an armadillo, a purse, or Bryant-Denny Stadium. You'll watch and learn all the tricks, then eat the finished piece. This is a demonstration class. $15.00 includes coffee and gelato!
Cake Decorating I
Learn the basics of cake decorating, including how to level a cake and how to ice a cake. Then learn about the different kinds of buttercreams, when to use them, and how to add color. Finally, explore the basics of piping, starting with how to fill a pastry bag, how to pipe borders, and basic writing and drawing techniques. This is a full participation class; each participant will ice and decorate a 2-layer, 8-inch cake to take home. Fee includes cake and icing, cake board, cake box, and use of icing colors, pastry bags and tips. Class size limited to 6. $45.00
Cake Decorating II
Learn how to make cornelli lace, sotas lace, and scrolls. We will also practice making buttercream roses and leaves. This is a full participation class; each participant will ice and decorate a 2-layer, 8-inch cake to take home. Fee includes cake and icing, cake board, cake box, and use of icing colors, pastry bags and tips. Class size limited to 6. $45.00
Cake Decorating III - Fondant
The biggest trend in cakes! Learn to use rolled fondant to cover, smooth and decorate a cake. Plus, make molded roses.You will also learn how to make royal icing, and how to use icing over fondant to add dimension to a cake. This is a full participation class; each participant will ice and decorate a 2-layer, 8-inch, fondant covered cake to take home. Fee includes cake, icing, fondant, cake board, cake box, and use of icing colors, fondant tools, pastry bags and tips. Class size limited to 6. $75.00
Bread Making
Learn to make Ciabatta bread, a light open-textured bread with a crispy crust. This is a full participation class; each participant will make a biga (starter) and loaf of bread to take home. We may also make Focaccia bread and/or Baguettes (see schedule). Fee includes all materials. Class size limited to 6. $35.00
Marzipan and Modeling Chocolate
Learn to make marzipan from almond paste, and modeling chocolate and then turn it into a beautiful basket. Learn to sculpt and twist the clay-like candy to make molded roses, fruit, and other figures that can be used to decorate a cake. This is a full participation class; each participant will make a chocolate basket and several figures to take home. Fee includes chocolate clay and use of clay tools. Class size limited to 8. $35.00
Chocolate Truffles
Learn to make the ultimate in chocolate candy. Chocolate and cream whipped to a delightful center, with flavors added. Fee includes all supplies. This is a full participation class; each participant will bring home a box of truffles. Class size limited to 8. $35.00
Petit Fours
Learn to make classic French Petit Fours. Participants will learn how to make a classic almond cake used for petit fours. The class continues with the technique of dipping the cut cakes in poured fondant, and finishing with a piped decoration. This is a full participation class; each participant will take home a dozen petit fours. Class size limited to 6. $35.00
Introduction to Wedding Cakes
Learn how to stack a cake for a wedding or other celebration. This is a demonstration class. Chef Mary will ice and stack a 3-tier wedding cake, while explaining the architecture and structural needs of a stacked cake. We will explore stacked and separated cakes, and discuss cake toppers and other decorations. Tips on packaging and transportation of stacked cakes will be provided. Each participant will also learn how to cut a stacked cake and will take home several slices of cake. $25.00
Holiday Cookies for Kids
Chef Mary will help the children create decorated shortbread cookies to take home with an assortment of candies, icing, and fun. Fee includes all materials to decorate 2 dozen cookies. Class size limited to 10 children. $35.00
Holiday Cookies for Adults
We bake the cookies and make the icing. You decorate them and take them home. Fee includes all materials to decorate 2 dozen cookies. Class size limited to 10 adults. $35.00
